Zucchinis for Bikinis
“If people were meant to pop out of bed, we’d all sleep in toasters.” – anonymous
This quote came to mind this morning because I really did pop right out of bed when the alarm went off! It was sunny, we had a fresh breeze coming through the window, and I was so looking forward to redeeming myself from my awful run on Sunday.
I know, BARF, right? Sorry, I’m just a morning person by nature! Instead of hating me for being chipper in the morning (as former roommates always have), you can make fun of me and call me lame for going to bed at 10AM most nights.
We set out for a little 5 mile run in Liberty State Park and the run absolutely flew by. It was nice and cool, relatively empty, and so serene.
I came in just shy of 5 miles but whatever. It felt great to be out there, and felt even better to be properly fueled!
We’re home this weekend visiting my dad, and I asked Kman if he’d accompany me on a 13 mile run around my hometown. I love running with him because he’s such a great runner and very encouraging. I want to tackle 13 miles about a month out from the half just so mentally, I know I’m prepared. Then the rest of my training will just be gravy.
Oh, and speaking of being properly fueled, the whole wheat zucchini muffins I made last night probably had something to do with it! I love baked goods with some sort of vegetable in them (pumpkin loaf, carrot cake…) because you totally feel like it’s fine to eat an extra or two. Right? These particular muffins are actually good for ya at only 150 cals each!
My Lose It app is very happy with that figure. Gotta keep this lb-dropping train moving!
I left the recipe with calorie calculations on my iPad, so I’ll have to post the recipe tomorrow…but two words: lemon. zest.
I swear, it added such a nice little extra kick of flavor, and the muffins are incredibly moist. I loooooove me some zucchini!
In other exciting news: we have a moving date! May 15th and it’s buh-bye, Jersey City…helloooooo Brooklyn! I guess this means I should start packing sometime soon. Making a list about packing counts, right? Good, I thought so!
Question: For you runners out there…do you run the distance of a race before the actual race day? Or do you rely on your training and adrenaline to get you through the end of it?

The muffins look great!!! Happy running!!!
I haven’t found any food that could not be enhanced with a shot of lemon.
Yum- I never thought of adding lemon zest but sounds good.
Before my last half marathon, I ran 14 miles about 1.5-2 weeks out. It was slowish but it gave me heaps of confidence. Knowing you can make the distance comfortably means you can focus more on putting in hard effort and speed in the race
