Slammin’ Salmon Burgers

 

For some reason lately, I’ve been so annoyingly indecisive! You know it’s bad when you start annoying yourself.

Yet again, I changed dinner plans on a whim. Remember that craving for salmon burgers that all of a sudden sounded terrible once I got to the store? It came back with a vengeance last night. I had bookmarked this recipe in preparation for the meal, but noticed a few tweaks that I wanted to make to it.

disclaimer: When shopping, make sure you’re buying BONELESS, SKINLESS canned salmon. Otherwise, you’ll spend a disgusting few minutes picking through canned fish, trying to remove all sorts of gunk. Slammin ‘ Salmon Burgers

For Burgers:

  • 2 teaspoons freshly chopped parsley leaves
  • 1/2 Vidalia onion diced
  • 2 eggs
  • 3/4 cup panko bread crumbs
  • 1 teaspoon cracked black pepper
  • 1 teaspoon sea salt
  • 1 lemon, zested
  • 2 (6 1/2-ounce) cans Alaska skinless and boneless pink salmon, drained well
  • 3 tablespoons grapeseed oil (you could also use canola oil here)

Directions

Preheat oven to 400 degrees F.

In medium bowl, combine parsley, onion, eggs, panko crumbs, pepper, salt, and lemon zest together. Add drained salmon and mix well together. Make 5 patties and set aside.

In a large skillet on medium, heat 3 tablespoons of grapeseed oil. Place burgers in skillet. Cook over medium heat until browned. Turn and brown other side. Place in oven for 3 to 4 minutes.

Dill Mayonnaise:

  • 1/2 cup mayonnaise
  • 1 lemon, juiced
  • 2 tablespoons dill
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked black pepper

Combine all the ingredients in a small bowl and set aside.

I ended up adding more bread crumbs once I noticed that the patties were a wee bit crumbly in the pan. Actually, in hindsight, this also could have been due to me fondling the salmon picking bones out…I’m not quite sure.

I served these up on some whole wheat ciabatta, with the dill mayonnaise, and a few pieces of kale on top. I love sneaking kale into sandwiches, or anything really! icon smile Slammin Salmon Burgers

I baked a batch of peanut butter cookies to bring into work icon smile Slammin Salmon Burgers

I’m not totally in love with them. That might explain why I forgot to snap a picture of them. Also, they just look really plain and…peanut butter-y. Not really photo worthy! Maybe it’s because after eating one, I feel like I need to chug a gallon of milk, or maybe I could have used a better recipe. Either way, the cookie monsters at work seem to like them, so it all worked out!

All looks delish! Kman looks so badass. Going to need to get my hands on those pb cookies asap!
